Grapes (Vitis vinifera L.) are one of the oldest known beneficial nutrients in the human diet. Its high polyphenol content has been shown in studies to enhance human health. The purpose of this study was to verify the anti-inflammatory activity of concentrated grape juice powder in vitro. The research method was analyzed by ANOVA to inhibit the anti-inflammatory effect induced by lipopolysaccharide (LPS) and analyze the changes in the production of inflammatory factors such as nitric oxide (NO), interleukin 6 (IL-6), and tumor necrosis factor (TNF-α) in macrophages using different concentrations. The results of the study showed that concentrated grape juice powder can inhibit the production of NO and show significant anti-inflammatory effects; however, it has no significant anti-inflammatory effect on inhibiting the production of IL-6 and TNF-α. The conclusion of this study revealed that concentrated grape juice powder exhibits anti-inflammatory effects and can provide a reference for human nutrition and health care. |
