便當係簡便價廉之食品,銷售量甚大,其衛生條件影響食用者之健康極大。為瞭解台灣地區市售便當污染大腸桿菌與金黃色葡萄狀球菌之實際情形,自民國74年4月至6月間,以隨機取樣方式,自台灣地區20縣市(包括台北市與高雄市)價購便當檢體420件,並依據行政院衛生署72.2.16衛署食字第411598號公告「食品中大腸桿菌之暫行檢驗方法」與74.3.21衛署食字第518846號公告「食品中金黃色葡萄狀球菌之暫行檢驗方法」加以檢驗。檢驗結果顯示市售便當污染大腸桿菌與/或金黃色葡萄狀球菌之比率為20.0%(84/420),污染大腸桿菌比率為13.50%(57/420),污染金黃色葡萄狀球菌比率為8.1%(34/420),染情形可說相當高;若地區分,則污染大腸桿菌與/或金黃色葡萄狀球菌之比率,依序為南區13.0%(13/100)、東區22.0%(22/100)、北區24%(24/100)、中區25%(25/100),以南區之污染率最低,其餘三區之污染率則相差無幾,而污染大腸桿菌或污染金黃色葡萄狀球菌之情形亦略似,詳見表一。而每公克檢體中金黃色葡萄狀球菌菌數介乎40~6.8X104之間,大部份在102至103之間。
This project was to inspect the existence of Escherichia coli and Staphylococcus aureus in lunch box. 420 samples were purchased randomly all over the island, from April to June, 1985. The results showed that the contamination in lunch box by these bacteria was quiet serious. The percentage of contamination of E. coli and/or S. aureus, E. coli and S. aureus were 20.0%, 13.5% and 8.1% respectively. |
