肉味鮮美,營養豐富之生魚片甚受大眾喜愛,為了解其衛生狀況,於民國73年7月起全年度分四季於台灣南部各縣市飲食店,攤販價購市售生食用生魚片檢體共160件,調查其微生物污染情形,依據中國國家標準CNS10984號:大腸桿菌屬細菌之檢驗,行政院衛生署71.8.16衛署食字第|388288號公告:生菌數之檢驗,72.2.16.衛署食字第411589號公告:葡萄狀球菌、大腸桿菌及沙門氏桿菌之檢驗及74.3.21.衛署食字第518846號公告:腸炎弧菌之檢驗等檢驗方法分別予以檢驗,若比照我國現行食品衛生法令中生食用魚介類衛生標準一大腸桿菌屬細菌,沙門氏桿菌、葡萄狀球菌均陰性一來討論,則結果顯示:共有84件與規定不符,佔52.5%,如胰一、二、其不合格率雖因季節性之變化而略異,夏季(7月)高達65%,但氣溫較低之冬季(元月)亦達47.5%,若依檢體來源分析,如表三,飲食店及攤販之不合格率分別為55.2%及50.0%,差異不大,可見台灣南部地區生魚片普遍遭受微生物污染。
160 samples of SASIMI were collected for study of bacterial contamination during July 1984 to June 1985. The results were as follows: total plate counts: 5.0x104~2.5x108 /g, positive to staphylococcus: 39 cases (24.4%), positive to E. coli: 21 cases (13.1%), positive to coliform bacteria: 58 cases (36.3%), salmonella and vibrio parahaemolyticus were not detected. |
