由於各種人工甘味劑之毒性問題,相繼被各國禁止或限制使用,各國積極開發新的代替品,甜菊素為極具潛力之天然甘味劑,為顧慮其安全性,我國尚未將之納入法定甘味劑。本實驗係就甜菊素之定性、定量以及食品中甜菊素之檢驗方法做初步的探討。
In an attempt to produce stevioside as a substitute for synthetic sweeteners, Stevia rebaudiana is cultivated extensively in Japan. There is no evidence that stevioside is generally recognized as safe for use as an ingredient in human foods. It remains an unregulated food additive and therefore prohibited from use in food in our country.This paper reports the preliminary results of the stevioside examined by thin-layer chromatography and gas chromatography. Ten commercial product were also analyzed for the quantitative determination of stevioside by gas chromatography in this experiment. |
