In Taiwan, box meal industries have a relatively large output and are located at the end of the food industry chain. With increasing diversification in the development of the domestic food industry, box meals are not only supplied for school lunches, but also distributed to the transportation sector and convenience stores. In this study, inspections and counselling of box meal factories were conducted. This provided an overview on the aspects of sales and production in the box meal industry, food material management, as well as allowed the identification of potential risks in the supply chain. Furthermore, strategies on the management of the box meal industrial supply chain were proposed to improve the sanitation and safety management of box meal businesses from the farm to the dining table. |
