Overview on the Management of Box Meal Industries in Taiwan

餐盒食品相關產業為國內食品產業鏈末端且供應量甚大之產業，隨著國內餐飲產業之發展益趨多元，餐盒食品之供應對象除傳統的校園午餐外，亦包括陸路運輸業、航空運輸業及便利商店等通路。本調查透過執行餐盒食品工廠查核及輔導之委託辦理計畫，綜整餐盒食品相關產業產銷及食材使用管理等概況，分析餐盒食品產業鏈及可能發生之風險，並研析餐盒食品相關產業鏈之管理策略分析，藉以提升餐盒食品業者衛生安全之管理層次，落實從農場到餐桌管控之管理精神，進而達到食在安心健康的目標。

In Taiwan, box meal industries have a relatively large output and are located at the end of the food industry chain. With increasing diversification in the development of the domestic food industry, box meals are not only supplied for school lunches, but also distributed to the transportation sector and convenience stores. In this study, inspections and counselling of box meal factories were conducted. This provided an overview on the aspects of sales and production in the box meal industry, food material management, as well as allowed the identification of potential risks in the supply chain. Furthermore, strategies on the management of the box meal industrial supply chain were proposed to improve the sanitation and safety management of box meal businesses from the farm to the dining table.
