市售食品中阿斯巴甜含量之調查

INVESTIGATION OF THE CONTENT OF ASPARTANE IN MARKET FOOD

阿斯巴甜（Aspartane）是雙胜肽 Asparty1pheny1anine 之甲基酯，為一種白色無臭味的結晶粉末，具有清甜如糖的味道，其甜度相當於蔗糖180-200倍。少量即可達到適當的甜度，且不具熱能，同時並會增加及延長食品，飲料中水果（如檸檬及橘子）的香味，所以目前美國生產的低熱量可樂或汽水都使用阿斯巴甜，而阿斯巴甜在可樂、汽水這類帶酸性飲料中並不安定，但除非超過40%以上之阿斯巴甜已經分解，否則消費者很難嚐出異樣，因此飲料公司在裝瓶階段多添加超量之阿斯巴甜以彌補分解之損失。阿斯巴甜生化代謝路徑與蛋白質相同，最後變成苯丙氨酸及天門冬氨酸，因此對一些笨酮尿症的患者有重要關係。民國73年11月行政院衛生署許可阿斯巴甜用於糖尿病患者食品，低熱量食品（包括代糖錠劑及粉末）。包裝瓜子及水分含量25%以下之包裝蜜餞，且規定使用本品之食品（包括代糖錠及粉末）應顯著標示「萃酮尿症患者（phenyketonurics）不宜使用」。為了解市面上食品使用阿斯巴甜之狀況，於民國76年7月至77年6月抽購檢體50件以進行此一調查計畫。

The content of Aspartane in marketed food is determined by te thin layer chromatography and the high performance liquid chromatograph methods. Altogether, the 50 samples consisted of: beverages, soy sauces, candied fruits, cereal products and special foods. These samples collected and anallyzed. The results showed that 3 samples were detected positive: 2 of them were drinks with Aspartane content of 26.7% mg/ kg and 491. 2 mg/kg. The other was special food and the Aspartane content was 782.0 mg/ kg.
