In this study, introducing Menu Engineering of Michael L. Kasavana, Donald I. Smith (1990): (1)Menu Analysis; (2)Menu Mix Analysis; (3)Menu Engineering; (4)Menu Grid Matrix Analysis; (5)Engineering Graph to proceed to menu management. How to screen star product and find products of plow horse and puzzle to amend its pricing and positioning strategy are top urgent issues. Massive data (i.e., Big Data) accumulated from menu engineering analysis should be applied to data warehouse, data mining and analysis. For market management, menu management, production and business operation purpose, market simulation, prediction, modeling and create innovative alternatives are needed. Successfully integrate OT matrix, Boston BCG matrix, Mckinsey GE matrix , Balance Scored Card(BSC), Menu Engineering, FORD 8D Problem-solving, Mckinsey 7S Model, New Product Development, Agile Innovation Management, Marketing Mix(7P-7C), Ansoff Matrix to draw “Innovation Management Strategy Roadmap and operation procedure of Menu Engineering.” Finally, “Graphic Strategy Map” can promote to menu management and performance assessment in food and beverage industry. |
