This paper investigates the ‘All-you-can-eat Buffet’ in Chinese restaurants of Hawaii. While Chinese restaurants and Chinese cuisine have a long tradition of over one hundred years in Hawaii, ‘Chinese buffet’ has emerged during the past decade and become popular in most Chinese restaurants. As Chinese cuisine is a major restaurant food in Hawaii and elsewhere in the United States, it is worthwhile to study why and how ‘buffet,’ and ‘Chinese buffet’ in particular, has come recently to dominate the dining-out food scene in Honolulu.1 |
