甲午戰後對臺的統治者由清廷轉為總督府,原先以漢人為大宗的移民人口,也隨著日本的統治需求而有日人移民的遷入,相異文化的族群開始在此地上有所交流。而在官方的統治下,民間又是如何肆應?即成為本文關注的焦點。在研究區域上,相較於臺北代表日本文化與新文化的重鎮,以及臺南代表臺灣傳統的文化中心,臺中作為第一個完全由日本規劃的城市,成為了日、臺文化競爭的主場所,故選擇臺中市街作為本研究的討論區域。在民間生活的觀察上,則是以飲食作為對象,本文先從臺中的飲食經營開端討論,觀察清末到日治的飲食消費情形,並藉由對於人口的分析,討論飲食業在臺中發展的可能,再者由歷時的角度端看飲食業與空間上的關聯,最後以各族群業主開設店家的空間區位以及各類型料理店家的分布,比較與居住在臺中市街上的人民關係。
After the First Sino-Japanese War, Taiwan was ruled from Qing Dynasty to Taiwan Sokofuku under Japanese colonial rule. Expect the Han Chinese moved and lived in Taiwan, the Japanese moved to Taiwan because the needs of colonial rule. The two different cultures met on this island then. The key point of this paper is “How the people adapted to the Japanese colonial rule in Taiwan ?” Camparing with Taipei, the symbol of the Japanese new culture, and the hub of Taiwanese traditional culture, Tainan. Taichung, the city which was totally planned and built by Japanese colonial government, became the region of the cultural competition among Japanese and Taiwanese. Taichung is chosen as the research area of this paper. This paper started on the diet management in Taichung from the period of Qing Dynasty rule to Japanese colonial rule. First, this paper discusses the development of the catering business in Taichung that depanding on the population analysis, then focuses on the changing of the catering business in this area. After all, observing the lifestyle based on spatial locations of each ethnic groups and all types of resturants' distribution in Taichung between people and the city |
