硼酸及其鹽類是禁止使用於食品的,惟過去時常被違規使用於加工食品中。本局最近三年所做的調查發現使用情形仍極普遍。根據外國文獻記載,硼化合物廣泛分佈於植物中,尤以海草最多,食品中海藻的硼酸含量在300~100mg/kg,茶葉的含量在40~30mg/kg,果實中亦含有60~20 mg/kg,部分礦泉中亦含有。在我國由於此類資料報告很少,因此如果在食品中檢出,欲判斷是人為添加或者是天然成分,則相當困難。因此確有依照各種食品的種類予以分別檢驗分析天然硼酸含量的必要。自七十三年七月至十四年六月,在全省各地的市場魚港價購農水產食品及其加工品150件檢體,參照福井昭三等改良的檢驗方法──以2-乙基-1,3-己二醇(2-ethyl-1, 3-hex| anediol)及氯仿溶液為萃取溶媒,用酸化薑黃比色定量法分析其中的硼酸及其鹽類的天然含量,以供有關機關稽查管理之參考。結果自魚介類及其加工品檢出硼酸及其鹽類的總量在ND~77.0mg kg,自藻類及其加工品檢出2.2~564.7mg/kg,自果實類及其加工品檢出0.8~5.8 mg/kg,自蔬菜類及其加工品檢出2.6~107.0mg/kg,自茶葉檢出25.1~95.1mg/kg。
To determine the contents of Boric Acid and Borate in agricultural and aquatic foods and their products, 150 samples were collected from July 1984 to June 1985. These samples were analyzed by chelate extraction with 2-ethyl-1,3-hexanediol and chloroform, then determined quantitatively by means of ''Colorimetric Determination Method'' with protonated curcumin. The results showed that the contents of the two compounds ranged from ND to 564.72 mg/kg in aquatic foods and their products, and 0.82 to 107.01 mg/kg in vegetables; fruits and their products. |
