本調查研究旨在了解國內產製魚肉煉製品使用溴酸鉀現況及在衛生安全上其殘留量是否符合食品添加物用量標準,檢體係從台灣地區採樣計236件,包括魚漿64件,魚丸88件,魚糕41件及魚糕捲43件,採用陰離子交換樹脂管柱一比色法進行溴酸鉀殘留量之分析。經調查檢驗結果,不合乎食品添加物用量標準者計3件(佔1.3%),均屬魚丸製品而超過標準限量270ppm之規定。合乎該標準者計22件(佔9.3%),其餘檢體計211件(佔89.4%)溴酸鉀均未檢出。
To investigate the usage and residue of potassium bromate in commercial fish paste products, 236 samples including 64 fish paste, 88 fish ball, 41 Kamaboko and 43 chikuwa were purchased and analyzed by means of anion exchange resin column separation followed by colori metry.The results showed that potassium bromate residue in 1.3% samples (fish ball) were over the regulation of requirement, 9.3% samples were corresponded to regulation limit, and 89.4% samples were undetected. |
