近代中國受到西風影響,在飲食文化與衛生觀念等方面均有改變。基於衛生理由,人們改變傳統飲食習慣;西方營養學的傳入,則改變了飲食內容。上述議題在近年來已累積不少成果,但多集中在公領域飲食文化、個人衛生觀念或行為轉變的討論,較少論及在家家戶戶中,日日負責準備家人飲食的女性實際扮演的角色。有鑑於此,本文利用民國時期留存的日記、報紙、雜誌、口述歷史、傳記、食譜等,輔以相關二手研究,進一步呈現婦女在私領域的煮食勞動,對個人飲食衛生、保健實作的影響,以及家庭飲食文化呈現的性別關係。
The western culture had a strong impact on Chinese food culture. People changed their traditional habit of ingestion for hygiene reasons, and changed their food ingredient according to the “new” nutriology. Recently, many researches focused on the transformation of eating culture or personal hygiene concept and behavior. But few discussions are on the roles of women, who were responsible for everyday cooking for their family, played in the modern China. This paper adopts extant diaries, newspapers, journals, magazines, oral histories, biographies, cookbooks, and relative research papers to discover women's cooking practices in the Republican Period. Also, this paper further clarifies how women's practices influenced the personal practices of eating and health care, and the gender relationship of domestic feeding culture. |
