A review on the details of cell lignification and fibrousness of post-harvested asparagus spears is presented. Some other post-harvest physiological changes, such as changes in pH values, contents of Vit.C, sugar and chlorophyll, in addition to feathering problems are also discussed. Recommendations on the immediate cut end soaking of the harvested asparagus spears in cold water, the afternoon harvesting of green asparagus, and the close cooperation of the food processing companies are suggested. |
