籚筍嫩莖採收後的老化問題

Review on the Toughness of Post-harvested Asparagus Spears

本文為中外有關採收後蘆筍老化問題研究之整理與介紹。重點在討論採收後蘆筍細胞的本質化與纖維化，包括研究方法之介紹，有關之酵素，影響因子，藥劑處理，普通及控制大氧低溫貯藏法等之研究。此外又是採收後之其他生理變化，例如pH值，維他命C，糖份，葉綠素含量等變化及筍尖開展問題。本文鄭重建議籚筍一經採收後即應將基部浸水，並配合以低溫運送及貯藏，以減少纖維之發生，提高品質。並強調綠籚筍之採收應在下午，盼望加工廠之作息能與原料之護得作密切之配合。

A review on the details of cell lignification and fibrousness of post-harvested asparagus spears is presented. Some other post-harvest physiological changes, such as changes in pH values, contents of Vit.C, sugar and chlorophyll, in addition to feathering problems are also discussed. Recommendations on the immediate cut end soaking of the harvested asparagus spears in cold water, the afternoon harvesting of green asparagus, and the close cooperation of the food processing companies are suggested.
