非洲白蔘[Mondia whitei（Hook. f.）Skeels]為蘿藦科具特殊香氣之藤本植物；本研究以水蒸氣蒸餾結合溶劑之Likens-Nickerson萃取方法，再結合氣相層析儀及氣相層析質譜儀分析及鑑其主要揮發性香氣之成分組成。共分離出14種主要揮發性成分。其中有11種經比對質譜資料庫後可被鑑定，而另外3種則尚未被鑑定。根部的主要揮發性化合物為2-hydroxy-4-methoxybenzaldehyde，鮮重每公斤根約含有130毫克。每公斤根並含有3毫克methyl salicylate。 Mondia whitei (Hook. f.) Skeels, a liana plant of Asclepiadaceae family, has a predominant flavor. We analyzed and identified volatile compounds of its roots by gas chromatography/mass spectrometry. Fourteen major volatile compounds were found. Eleven of them were identified by matching with the library of mass spectrum, but three others were not. The major volatile compounds in the root of M. whitei were 2-hydroxy-4-methoxybenzaldehyde and methyl salicylate. The contents were about 130 and 3 mg, respectively, per kg of fresh root.
