市售可樂飲料中磷酸含量之調查

SURVEY ON SANITATION OF PHOSPHORIC ACID CONTENT IN COLA-DRINKS

磷酸 （phosphoric acid） 係糖漿狀透明液，無臭。其無水物為無色柱狀結晶體，比重1.88，融點42.3℃，吸濕性強，易容於水，於215℃左右失去水分變為焦磷酸，加熱至300℃變成偏磷酸。食品添加物磷酸通常指Ortho phosphoric acid 而言，以乾式法製造，市售含量有89%，85%，75%等，但食品添加物規格標準規定其含量應在85%以上，食品用途很少，僅限用於可樂飲料，作為酸味劑。因現行食品添加物使用範圍及用量標準中規定可樂飲料准予添加調味劑─磷酸 （Ortho phosphoric acid） 不得超過0.6g/kg，為實際明瞭市售可樂飲料使用調味劑磷酸之情形，於75年9月至76年6月間赴北部、中部、南部，十二縣市之超級市場，平價福利中心，雜貨商店，以逢機取樣方式抽購檢體109件，經參照 method of analysis AOAC （1984） 中 phosphorous in wine 項予以檢驗，結果發現109件中僅5件磷酸用量超過標準限量 （0.6g/kg以下），其含量介於0.82～0.99g/kg 之間，其餘104件均與規定相符。其含量範圍為O.00g/kg～0.53g/kg，但有2件進口品未檢出磷酸，則總件數109件中與規定不符者5件，佔4.6% （見表一、圖一） 。由以上檢驗結果顯示有5件超過規定含量（0.06%以下），其不合格率甚低，範圍在0.082%～0.099%。

In an attempt to understand whether commercial cola-drinks had contain phosphoric acid. one hundred and nine Samples were purchased from market and analyzed during Sept 1986 through June , 1987. The results show that two samples were formd undetectable, whereas others contained phosphoric acid between 0.01~0.99g/kg. Among them 5 samples (4.6%). exceded the permitted allowance (less than 0.6g/ kg).
