進口冷藏食品魚糕、魚捲之防腐劑調查

SURVEY ON PRESERVATIVES IN IMPORT FROZEN FOOD

市售之冷藏食品乃是以農、畜、水產為原料，經調理加工後之混合或單項食品。但冷卻、冷藏並不能抑制食品中微生物之繁殖與分解作用。於魚肉類，仍將因黴菌及細菌的繁殖而致腐敗。業者在製售此類食品時，為維持其在販賣間之品質、風味，在製造時即有添加防腐劑於內。為瞭解進口冷藏食品添加防腐劑之實際情形，乃於七十四年七月至七十五年六月於台灣省各縣市超級市場、攤販抽購以冷藏方式販賣之進口冷藏食品，經查均屬魚糕及魚捲兩大類（其抽購地區與抽購件數如表一） ，依中國國家標準（總號10949，類號N6190─食品中防腐劑之檢驗法）進行檢驗。

100 samples including 88 Kamaboko and 12 chikwwa were collected in Taiwan area and analyzed for preservatives. The results were as followa (1)20 samples including 16 Kamaboko and 4 chikuwa were found to contain nonpermitted preservative, ben 20ic acid; together with permitted preservative, sorbic acid, at allowed level . (2)55 samples were found to contain permitted preservative, sorbic acid, and the amountadded mit the allowed level. (3)The remaining 25 samples did not cantain deteytable amount of presenatives.
