Tubers, which serve as vital storage organs in plants, are instrumental in global food security and nutrition owing to their high carbohydrate content. This review examines a range of tuber varieties, including potatoes, sweet potatoes, yams, and cassava, with a focus on their composition, molecular structure, and starch properties. The starch composition of these tubers, including amylose and amylopectin content, along with the presence of soluble and insoluble fibres, plays a significant role in their nutritional value. Furthermore, the paper discusses the importance of sugars including glucose, fructose, sucrose, and maltose in tuberous vegetables, while also emphasizing the health benefits associated with both resistant and nonresistant starches. A deep understanding of the carbohydrate profiles and dietary benefits of tubers is essential for maximizing their potential in global diets, promoting public health, and fostering sustainable food systems. |
