Inulin, a naturally occurring polysaccharide, has gained significant attention in recent years due to its diverse health benefits and potential applications in various industries, especially in the food, pharmaceutical, and biofuel sectors. This review explores the advancements in the production and utilization of green inulin, which emphasizes environmentally sustainable methods of extraction and application. Innovations in green extraction techniques, such as the use of eco-friendly solvents, enzymatic treatments, and green chemistry approaches, are highlighted for their reduced environmental impact compared to traditional methods. The review also examines the expanding usage of inulin as a functional ingredient in health products, focusing on its prebiotic effects, role in improving gut health, and potential in reducing the carbon footprint of agricultural and industrial processes. Furthermore, this paper discusses the challenges and future directions in scaling green inulin production, including supply chain optimization and economic viability.
