The rice, Oryza sativa L., belongs to a monocot grass, is a very important staple food crop in Asian-Pacific region including Taiwan and Vietn- am. The rice is the third largest food crop in the world after wheat and corn and more than 90% of the rice in the world was produced and consu- med in this region. Among them, Vietnam had the third highest export volume of rice worldwi- de, at 7 million metric tons as of2018/2019. It was known that several factors influence the rice production annually. Firstly, the content of amyl- ose in each rice variety is different for the deter- mination the texture and property of the cooked rice. Secondly, the cultivated rice species and the rice breeding varieties are also diversified in diff- erent area. |
