為明瞭本省東部地區市售之香腸類等食品添加之保色劑是否合乎規定,同時調查有無添加不得使用之硼酸及其鹽類,共抽驗420件檢體,檢驗結果皆未發現添加硼酸及其鹽類,而添加保色劑不符規定者為14.0%,其中火腿類均符合規定,而香腸類18.7%與臘肉類4.1%不合規定。
To investigate the residual nitrites content and borate presence in sausage, ham and bacon, 420 samples were purchased and analyzed during 1983–1984. The results showed that nitrite residue of 14.0% samples (18.7% of sausage and 4.1% of bacon) did not meet the regulation requirement. There were no residual borate found in all samples. |
