淺海養殖貝類中,牡蠣最易受工業廢水及都市污水、垃圾所污染。本研究係調查牡蠣重金屬及微生物污染,以期提供消費者及環境保護者安全性之參考指標。樣品於一年裡分四次採集(民國71年11月,民國72年2月、5月、8月),採自臺灣北、中、南主要城市(臺北、臺中、臺南、高雄等)。調查結果,發現重金屬含量隨季節而異,冬季2月份含量最高,夏季8月份含量最低。生菌數以5月份(1.6×10個/克)及8月份(7.2×10個/克)含量最高;腸炎弧菌均呈陰性反應。年平均之污染值為鉛1.0ug/g,銅24.7vg/g,75ng/g,生菌數為5.9×10個/克。但個別檢體中最高是鉛5.5rg/g,銅96.1ug/g,311ng/g,生菌數最高值達1.6×10°個/克。
Among the coast cultured shellfish, oyster is the most susceptible to contamination by industrial waste, municiple sewage and waste. Survey on the oyster heavy metals and microbial contamination are expected to use as indices for safety assessment for consumers and environmental protectors. Samples were collected four times from the markets in major cities in Taiwan (Taipei, Taichung, Kaoshiung) a year round; in Nov. 1982, and in Feb., May, Aug., 1983. The result showed that heavy metals content varied with the collection season with higher content in Winter (February) and lower content in Summer (August). Total plate count was found higher in sample from May 1983, 1.6 x 108/g and Aug. 1983, 7.2 x 107/g. No Vibrio parahaemolyticus was identified in all samples. Average contaminations of the year round samples were lead 1.0 ug/g, copper 24.7 ug/g, mercury 75 ng/g and total plate count 5.9 x 107/g. However, individual samples were found lead 5.5 ug/g, copper 96.1 ug/g, mercury 311 ng/g and total plate count 1.6 x 108/g which are the highest values. |
