由衛生局抽送本局之182件免洗筷與本局自拍之免洗筷130件,塑膠質重複使用筷283件及木質重複使用筷204件之檢驗結果加以比較,檢驗項目包括生菌數及大腸桿菌屬細菌。經變方分析結果顯示重複使用筷較免洗筷上之生菌數為多;重複使用筷中,木質筷上之生菌數較塑膠質筷上者為多。自工廠抽驗之免洗筷上生菌數較由臺灣地區十縣市市面抽驗之免洗筷上者為少,而市面上抽驗之免洗筷以嘉義地區者含生菌數(個/雙)最多,可資供該地區餐飲店衛生之參考。
Comparison of bacterial contamination between disposable and reusable chopsticks was performed. Total viable count and coliform bacteria were chosen as checking criteria. Wooden reusable chopsticks showed highest contamination than plastic reusable chopsticks and disposable chopsticks. The increase of total viable count of disposable chopsticks was also observed. |
