醬油中防腐劑與人工甘味劑之調查

INVESTIGATION OF PRESERV ATIUES AND ARTIFICIAL SWEETENERS IN SOY SAUCE

民團75年5月9日台灣新生報花東版刊載，部份自助餐店及路邊小吃攤使用之醬油，隱藏衛生安全問題。就其刊載內容研判，問題可能出在添加之防腐劑與人工甘味劑等二類。依食品添加物使用範圍及用量標準，醬油可添加苯甲酸及對羫笨甲酸及其醋類等防腐劑，但不得添加人工甘味劑。為明瞭實際情形，遂進行此調查，對象為大眾化餐飲業，包括自助餐店及路邊小吃攤。抽樣日期分為二梯次抽樣，第一梯次于75年11月17日至22日，第二梯次于75年12月15日至20日；抽驗之檢體數共計351件，詳見表一。檢驗方法係依中國國家標準CNS N6190號檢驗食品中防腐劑（苯甲酸、乙二烯酸、去水醋酸、對羫苯甲酸，水楊酸）；及中國國家標準CNS N6191檢驗調味劑（環己基代）磺醯胺酸，糖精，對位乙氧苯脲）。

Investigation of soy souce was carried out on November 1986 and DEC 1986, 351 samples were obtained randomly with the help of food inspectors of local Health Bureau. Preservatives were analyzed with thin layer chromatography and gas chromatography, and Sweeteners paper chromatography and gas chromatography and high performance liguid chromatography. Results showed 10.3% of samples did not meet the regulatory requirement, of which illegal addition of sweeteners was the major factor.
