食品中亞硫酸鹽之含量調查

具漂白、抗氧化及防腐作用之亞硫酸及其鹽類，除天然存在於某些食品，如大蒜、香菇、蘿蔔等外，亦廣被使用於食品加工中，以達到改善食品品質及外觀的目的，因此常與食品同時長期為人體所攝食；由於灣地處熱帶，氣候潮濕、炎熱，食品業者因此常有超量使用情形，本局於75年度所做之調查發現，脫水蔬果超量使用情形十分嚴重，僅金針一項68件檢體中即有39件超量，比率高達57.4%，且有含量高達23.47g/kg者。因此為了解亞硫酸鹽在其它食品之使用情形，本調查於民國七十七年一至五月間，自台灣地區二十一縣市之市場、攤販、雜貨店及百貨公司等抽購876件檢體，依食品添加物使用範圍及用量標準分為四類：（1）脫水蔬果類（用量標準為0.5g/kg以下），包括筍乾、蘿蔔乾、鳳梨乾、香蕉乾及冬瓜糖等597件（2）糖蜜及糖飴類（用量標準為0.3g/kg以下），檢體為麥芽糖62件（3）蝦類及貝類（用量標準為0.1g/kg以下），檢體為貝類干製品49件（4）上述食品以外之其它加工食品（用量標準為0.03g/kg以下），檢體為米粉168件；依據行政院衛生署公告'食品中漂白劑二氧化硫之暫行檢驗方法'測定其中二氧化硫之殘留量（本檢驗法之最低檢出量為3.2ppm），檢驗結果如表一，876件檢體中共250件檢出二氧化硫，佔總件數之28.5%，含量超出用量標準者40件，佔總件數之4.6%；四類檢體中，以脫水蔬果類之檢出率最高，在597件檢體中檢出239件（佔40.0%），超出用量標準者38件（佔6.4%）；其中又以冬瓜糖的違規情形最多，如表二，80件檢體中，檢出78件（佔97.5%） ，其中32件超出用量標準，佔40.0%為最高。

876samples included 1. dehydrated vegetables & fruits (597 samples) 2. Maltose (62 samples) 3. Scallops (49 samples) 4. Rice noodle (168 samples) were purchased from the supermarkets and grocery stores in Taiwan area from January to May 1988 for sulfite analysis. The result indicated that 250 samples were detected positive (28.5%). Among the 250 samples, there were 40 samples against the limited content. The reation of unqualified samples was 4.6%. To be noticed, in the 597 samples of the dehdrated vegetables & fruits, we found 239 samples were detected positive(40.0%). 38 samples were not corresponding to the regulations(6.4%).
