Just as vegetarianism has been given the meaning of ''health'' and ''love the earth'', the causes and influence of vegetarian dietary habits have also been discussed in recent years. Respectively, there are religious factors that were mainstream in the past and respected doctrinal ideas because of personal beliefs, and nowadays there are health factors that are prevalent and focus on the concept of health and wellness. And environmental protection factors that care about the environment and ecological conservation. Even caring for animals, advocating that animals should not be treated in captivity and over-feeding in factories, and more and more people choose to be vegetarian. Vegetarian food has an impact on individuals, the environment, industry and society, so the public's perception of vegetarian food is to be explored in this study. This article first collects relevant literature on vegetarianism, and constructs five facets: health and wellness, environmental awareness, religious factors, moral factors, and following the trend. Then use the modified Delphi method to conduct questionnaire surveys through experts in industry and academia, consolidate the opinions of the expert group, and construct a hierarchical structure of factors influencing vegetarian cognition on vegetarian motivation. Furthermore, Analytic Hierarchy Process (AHP) method is used to conduct a questionnaire survey, weight analysis is performed for each evaluation criterion, and consistency check and ranking are performed. According to the results of this study, it is found that the importance of the factors affecting vegetarian cognition in Yilan area are “healthy”, “environmental awareness”, “moral factors”, and “religious factors”. The research and analysis results would also provide reference for scholars' research, school healthy diet promotion, and personal diet. This would change the eating habits of the general public and drive the trend of vegetarian diets in Taiwan. |
