This paper mentions the history, production and marketing status, production of raw materials, processing techniques and equipments, packing containers, quality control, standards and specifications, and studies on new fruit juice products in Taiwan. It seems that we should develop intensively for those fruits which can be produced on large scale such as passion fruit, mango, guava, tomato etc. instead of developing those fruit juices at high cost. In view of expanding markets to European countries or Japan, it must develop natural juice or fruit juice concentrate in high quality. Therefore, to produce raw materials which is good enough for juice processing, improvements of processing techniques and related equipments, setting up aseptical storage tanks, development of new packing container as well as quality control are urgent mission to be worked out as soon as possible. In short, the development of fruit juice industry here in Taiwan, in spite of domestically or for export, should be carrying on parallelly in points of the industrialized production of raw materials together with the up-to-date techniques and equipments, then a bright future can be expected. |
