發展臺灣果汁工業之途徑

The Outlook of Fruit Juice Industry in Taiwan

本文闡述臺灣果汁工業之發展簡史、產銷概況、原料生產、加工技術及設備、包裝容器、品質管制、標準規格、市場以及新產品之研究等。對於原料水果生產成本高的果汁加工業似可暫緩投資，國內可以大量生產的果汁，如百香果、檬果、番石榴、番茄等似應積極發展；如欲拓展外銷歐洲及日本市場，必須生產高品質之天然果汁、或濃縮果汁。因此，自原料生產，改進加工技術、引進新加工機器設備，建立果汁貯藏庫，發展新包裝容器及品質管制等均為今後努力的目標。總之，臺灣果汁工業之發展應採取內、外銷並重的原則，配合原料企業化的生產及加工技術、設備的改進，才有光明的前途。

This paper mentions the history, production and marketing status, production of raw materials, processing techniques and equipments, packing containers, quality control, standards and specifications, and studies on new fruit juice products in Taiwan. It seems that we should develop intensively for those fruits which can be produced on large scale such as passion fruit, mango, guava, tomato etc. instead of developing those fruit juices at high cost. In view of expanding markets to European countries or Japan, it must develop natural juice or fruit juice concentrate in high quality. Therefore, to produce raw materials which is good enough for juice processing, improvements of processing techniques and related equipments, setting up aseptical storage tanks, development of new packing container as well as quality control are urgent mission to be worked out as soon as possible. In short, the development of fruit juice industry here in Taiwan, in spite of domestically or for export, should be carrying on parallelly in points of the industrialized production of raw materials together with the up-to-date techniques and equipments, then a bright future can be expected.
