餐廳及攤販所販售脆蝦仁中硼砂之調查

INVESTIGATION OF BORAX IN SHRIMP DISHES SOLD BY RESTAURANTS AND FOOD STANDS

民國83年10月至84年5月間，由台中市、高雄市及花蓮市等地餐廳所價購之炒蝦仁200件，以薑黃試紙鑑定是否摻加硼酸，檢驗結果發現5件為硼酸陽性，陽性率為2.5%，其中4件為花蓮市餐廳所販售，1件為高雄市攤販所販售。

A total of 200 shrimp dishes representative of restaurants and food stands of Kaoshung, Taichung and Hualien cities were collected and boric acid was analyzed qualitatively by official method. The result showed 2.5% of the samples were boric acid positive as assessed by the curcumin paper test.
