Food safety management keeps evolving. Introducing food safety culture-related norms, followed by incorporating the food safety culture into the food management system has become one of the developing directions of international food safety management in recent years. The elements of food safety culture, constructed by international regulations encompass leadership, communication, commitment to food safety, and personnel’s awareness of safety risks and resources. International organizations and government agency, including the Codex Alimentarius Commission, the European Union, and the U.S. Food and Drug Administration, have all actively introduced food safety culture management strategies into the food safety management system lately. The foundation for successful operation of the food safety management system is to establish and maintain a positive food safety culture. Besides, the concept, attitude and behavior of business managers and employees are absolutely important in providing safe and suitable food. |
