According to the voluntary implementation of HACCP hygiene assessment in the catering industry in 2023, the food service categories were mostly medical institution catering establishments, restaurants and school cafeterias. Major deficiencies found were hygienic management of buildings and facilities, HACCP plan, inspection and measuring instruments. After issuing a defect, most business operators can propose ways to improvement. After collecting the questionnaires from the 2023 business briefing session and the online education and training of assessors, the majority of catering businesses are willing to continue to implement HACCP, and they all believe that the implementation of HACCP is effective in improving the health and safety management capabilities. |
