隨著工業4.0時代的到來,科技在餐飲產業中的應用也帶來了重要的影響,如何應對工業4.0對餐旅產業之人才培育的挑戰,已經變得不容忽視。本文將討論如何將科技因素整合到現有的餐旅職業和學術培訓計劃中,提供學生未來所需的關鍵技能,使他們能夠迎接未來的挑戰。根據對全國87所技術型高中餐飲管理科的普查調查數據顯示,有2/3的學校在校訂課程中未開設資訊科技或數據分析相關課程;這顯示現行技術型高中課程在數位素養方面需要認真關切。此外,綜合相關文獻和技術型高中112年餐飲管理科課程規劃資料,建議在現有的技術基礎上,進行課程的調整和強化,特別是在數位科技、STEM教育、實習與實務經驗、創新與客戶體驗以及國際視野等方面,以提升學生適應新技能的能力,確保他們具備未來餐旅產業所需的相應技能,為他們的就業和職業發展奠定堅實的基礎。
英文摘要
With the advent of Industry 4.0, the application of technology in the catering industry has brought about significant impacts. How to address the challenges of Industry 4.0 to hospitality education has become an issue that cannot be ignored. This paper will discuss how to integrate it into existing hospitality vocational education and training, providing students with the essential skills for the future, enabling them to meet upcoming challenges. According to survey data from 87 vocational high schools nationwide with Department of Food and Beverage Management, two-thirds of the schools have not offered courses related to information technology or data analysis in their curriculum. This indicates a need for serious consideration of digital literacy in current vocational high school curricula. Additionally, by synthesizing relevant literature and the curriculum planning data of Department of Food and Beverage Management from vocational high schools in 2023, it is suggested to adjust and reinforce the courses, particularly in digital technology, STEM education, internships and practical experiences, innovation and customer experience, as well as an international perspective. This aims to enhance students' adaptability to new skills, ensuring that they possess the corresponding skills needed for the future catering industry and laying a foundation for their employment and career development.
