In recent years, with the improvement of nationals' living standards and the advancement of medical technology, the average life expectancy has increased year by year, and we have gradually entered an aging society. Compared with the dietary requirements, the dietary requirements have also gradually increased, and healthy meals have become a trend.Passion fruit contains rich nutritional value and dietary fiber, which is of great help to the stomach and digestion and absorption.In this study, passion fruit is used as a Western-styledish but is presented in a Chinese-style set meal. This method is in the hope of bringing both health and deliciousness.Using the sensory evaluation method, members from the University of the Elderly were used as the research objects to explore the preference and acceptance of passion fruit in dishes, and to understand the purchase intention and influence of the elderly on passion fruit meals.The questionnaire scale was developed, and the actual measurement was carried out through the physical evaluation experience, valid samples were collected for verification. The results show that there is no significant difference in product cognition, purchase intention and satisfaction among different population backgrounds.The product cognition of the middle-aged and the elderly is moderately related to the purchase intention, the product cognition of the middle-aged and the elderly is moderately related to the satisfaction, and the purchase intention of the middle-aged and the elderly is highly related to the satisfaction.Based on the supporting hypotheses obtained through the research and the on-site reactions of the interviewees, the following suggestions are put forward for reference.(1) Promote healthymealsand healthy concept, (2) Increase output value of agriculture,(3) Nutritional value, (4) Quarantine meals, (5) Improve customer satisfaction. |
