The results of the study are summarized as follows: 1.The edible portion of subtropical fruits was abundant, especially contained in citron and carambola with about 99.5% and 97.4% respectifully. Moisture content in these fruits was lower than deciduous fruits ancl vegetables of Taiwan. Ping-pong, a seed used fruit, contained a highest solid matter with 64.76% grams per l0O grams of edible portion among all analyzed samples of this determination. 2.The ashes of thirty kinds of subtropical fruits are presented as alkali reaction have been investigated. The more ashes were c ntained in Voa vanga, (Vangueria cdulis, Vahl,) citron and ping-pong with 2.1%. 1.99% and 1.78% respectifully. 3.The physiogical albli1ity and the total alblinity were normally presented in thirty kinds with eighteen families of the subtropical fruits. Voa vanga contained 14.175 millival (M.V.) , carissa and monkey jack came next with about 9M.V., while langset. roselle and. Florida cherry are very low in it ranging from O.67 to 1.34 M. V. 4.potassium content was commonly and higher found than other alkaline elements, as we know that potassium is one of. the main fertilizer to plant requirement. Phosphorus was more content among the acid elements in this investigation, Phosphorus is one ofethe main comp onents with calcium of our bonds, and its solution has a buffer reaction in our body. 5.The good source of calcium was found in many, kinds of subtropical fruits. Most of calcium of fruits are available to om body, it rarely conbined with O'Calic acid to form calcium oxalate. It was only fou.ud in carambola (16) which presented a high content of free oxalic acid and potassium oxalate, the free oxalic acid always easily conbined with calcium, maganese or other alkali elements to form oxalate conpottnd, it could not be absorbed by our digesting organs. 6.A little differev.cc in the contents of alkalinity between the direct testing method and the calculated method of this study has been shown in table 6. From the view point of chemical analysis, both method are available and they would be checked each other. The course of the difference upon the previous studies (6)(10) was shown accordant with the multiple error calculated by the individual inorgallic ingredie11ts. 7.In the retent years, canned and candied fruits are increaei.ngly produced here in Taiwan It needs a furthermore materials with good quality, Ping-pong, roselle, mongo and citron are te the good materials suitable for this purpose, if the cultivated area were extended. The author would like to introduce a wonderful subtropical fruit, Ping-pong, it is not only essily planting, but also has an abundent yield, insect and pastes resistant, and its tember is a good material for making furnitures. |
