馬鈴薯的儲存（三）收獲後抑萌劑對加工馬鈴薯儲存之影響

Potato Storage III Effects of Sprouting Inhibitors on Storage of Processing Potatoes

為使馬鈴薯能長期儲存於10°C，乃以化學抑萌劑Isopropyl-N-chlo-rophenyl carbamate（CIPC）及Methyl-1-naphthylacetate（MENA）處理薯塊。其中CIPC使用量在500～1,000 ppm時，即能有效抑芽，並使薯塊保持良好品質，週年供應加工廠。然MENA藥劑雖使用至10,000 ppm，儲存於10°C仍只有三個月之儲存期限。馬鈴薯以CIPC或MENA藥劑處理後常溫儲存（約30°C），由於嚴重腐爛率，使儲存期限無法超過三個月。

Newly harvested potatoes were treated with sprouting inhibitors CIPC or MENA, then stored at 10°C, 80% RII. During storage, sprouting of tubers was inhibited effectively by the treatment of CIPC at concentration of 500-1000 ppm. The quality of potatoes retained well and reducing sugar remained at a low level all year round. However, sprouting was only inhibited three months, in those potatoes treated with MENA even at a concentration of 10,000 ppm, When potatoes pretreated with CIPC or MENA were stored at ambient temperature (ca. 30°C), serious decay of tubers occurred after storage for three months.
