臺灣所謂的「高溫平菇」分類地位之商榷

On Taxonomy of a Coremioid Pleurotus Fungus Found in Taiwan

目前有一種適於臺灣氣候環境生長，又具外銷希望之新興菇，就是一般所謂的「高溫平菇」 或「高溫鮑魚菇」。產菇最適溫度在28°C左右，殺青後味道鮮美，頗有推廣栽培之價值。然而此菇之學名尚未確實鑑定，且亦無正確之中文名稱，在推廣栽培及製罐外銷上極為不便。所謂「高溫平菇」，所具有的菌學性狀與日本所稱之「平菇」（Pleurotus ostreatus （Fr.） Kummer）有極顯著之差異。根據作者之初步觀察，此菇之菌絲生長及產菇的最適溫度與真菌學性狀等均極符合Kaufert氏（1935）對Overholts氏暫時鑑定為Pleurotus corticatus （Fr. ex Fr.） Kummer的蕈，及 Miller氏（1969）對Pleurotus cystidiosus Miller菌之記載。在臺灣所謂「高溫平菇」之外形雖有數種，但皆具下列主要特徵，菌絲生長及產菇最適溫度為28°C左右，菌柄離心（eccentric），無菌環（annulus），菌傘無蓋膜（veil），菌褶垂生（decurrent）。

A coremioid Pleurotus fungus found in Taiwan has been tentatively identified as Pleurotus cystidiosus Miller. This fungus is characterized by eccentric stipe, complete absence of veil, presence of 4-spored basidia, white spore print, oblong-elliptical basidiospore (11 〜17x4.0〜5.5μ in size), coremia with black head on dikaryotic hypha, yellowish broun dikaryotic conidia resulting from the breking up of the free ends of coremia in basipetal fashion (conidia 9〜24.5x4.6〜7.8μ in size), single binucleate round conidia borne singly at the tips of small conidiophore, (conidia 2.6〜4.0μ in diameter) and complete absence of chlamydospore.
