市售淡水魚及海魚（生魚片）中寄生蟲之調查

SURVEY ON PARASITES CONTAMINATION IN MARKETED FRESH-WATER AND MARINE FISH FOR SASHIMI

本省民眾嗜食生魚片，南部地區之宴席上甚至以淡水魚製作之生魚片饗客，故近年來由於生食魚肉（特別是淡水魚）致感染寄生蟲之病例不斷增加，其中較常見的則是感染中華肝吸蟲，此蟲之感染症自1915年 Ohoi 首次於台中發現後，不斷有中外學者專家對台灣地區的人及動物作調查，結果顯示本省各地均有感染之病人，但對中間宿主──魚的污染情形則甚少研究。因寄生蟲不耐高溫，魚肉熟食即無問題，故本調查乃針對供作生魚片之海、淡水魚進行寄生蟲之檢驗，冀瞭解市售供作生魚片原料魚肉之寄生蟲污染情況。

A survey on parasites in fish was conducted from July, 1986 to June, 1987. A total of 140 samples of fresh-water fish and 60 samples of marine fish was purchased from markets in Taiwan area. Among them, 5 Ctenopharyngodon idellus showed positive contamination of Chinese liver fluke (Clonorchis sinensis), consisted to 2.5% of the total samples or 10.2% of the sampled.
